    The flywheel slicer consists of three basic elements:

    • the flywheel, i.e. the knob that holds the carriage in balance as it slides towards the blade;
    • the carriage, on which the meat to be cut is fixed with special screws;
    • the blade that makes the cut.

    How is a flywheel slicer used?

    Pushing the flywheel activates the manual mechanism that brings the carriage and blade together at the centre of the slicer. In fact, the carriage and blade move in opposite directions, converging towards the centre and thus producing a very precise cut.

    The blade diameter varies from 250 mm to 370 mm, for a 0 to 2 mm thick cut. For a well-made cut, it is essential to position the meat well on the slicer, taking care to secure it well.
