    The drying and seasoning cabinets are suitable for the seasoning treatment of cold cuts, cheese and meat, thanks to a ventilation system and preset seasoning programmes.

    What is seasoning

    Seasoning refers to the ageing process of cold meats, meats and cheeses. It is a process controlled by specific temperatures, aimed at transforming the fresh product into the final product with the flavour, aroma, texture and appearance we all know.

    Seasoning process

    The temperatures and maturation period vary depending on the product to be matured. The first stage is stewing, in which the sausage or cheese already begins to dry. This is followed by drying, at controlled humidity and temperature, and finally maturing, which can last up to 36 months as in the case of some cheeses.

    Characteristics of Drying and Maturing Cabinets

    Professional maturing cabinets are refrigerators equipped with a regulating thermostat to select the most appropriate temperature and humidity for the drying and maturing processes.

    The structure, both external and internal, is made of stainless steel suitable for contact with food. The front door can be either blind or glass, in the latter case also useful as a display cabinet with the cured meats in view.

    The size varies, from two to four internal shelves. Refrigeration is of the ventilated type, with an internal fan that evenly distributes the temperature to keep all the cured meats inside at the same degree of seasoning.

    Other features of the seasoning cabinets include:

    • temperature adjustment range from 0°C to +30°C;
    • humidity regulation range from 40% to 95%;
    • automatic defrosting;
    • condensation collection tray;
    • digital control panel;
    • Wi-Fi connection module for remote management.

    All these optional extras may vary depending on the model chosen.
