    Refrigerated Cells and Shelving

Refrigerated cells are machines generally used within catering activities to store raw materials, dough, meat, sausages, fish, vegetables, fruit and various food products. Ristoattrezzature offers a wide range of cold rooms to meet the needs of restaurants, pizzerias, butchers, fishmongers, supermarkets or canteens.

From the temperature to the dimensions, from the design to the safety systems, the characteristics of the cold room can vary significantly from one model to another: to choose the right one for you, therefore, you must first know the needs of your commercial structure, your premises or your shop.

Our cold rooms (of varying sizes), with positive refrigeration, generally have a non-slip zinc-plasticised floor, anti-condensation resistance on the door and a compensation valve; the motor is not included, but can be purchased separately in our online shop.

Indoor shelving units, with aluminium upright frames and cold-resistant polyethylene shelves, have a maximum load capacity of 150 kg (per single shelf) and can be ordered separately depending on the size you need. The modular structures, which we recommend you purchase, have a quick interlocking assembly and, furthermore, while they are really sturdy, they can be completely disassembled to facilitate daily sanitisation and cleaning.

What are the differences between positive and negative cold rooms?

Positive cold rooms have an average temperature between -2°C and +10°C. They are used for storing food such as fruit and vegetables, cheese, cold cuts, fresh meat and beverages, and ensure a constant internal temperature and low humidity thanks to low thermal transmittance insulation.

The second, negative freezing cells, which have a temperature range of -15°C to -25°C, are suitable for storing fish, meat, frozen food and more. Between the first and second topology, the differences are in internal temperature, intended use, materials and design. Cold stores are used in hotels, restaurants, fishmongers, ice cream parlours, pizzerias, butcher shops and fruit and vegetable stores. The choice of the most suitable model depends on your requirements and the function for which the cold room will be used.
