    What is a convection oven?

    Thermal convection occurs when hot air comes into contact with food of a lower temperature: the heat rises from the bottom to the top and the cold air performs the opposite movement, generating convective motion. The cooking of food, thanks to the ventilation of the air inside the heat chamber, will certainly be more homogeneous.

    The professional convection oven is characterised by a closed chamber in which the heat, generated by a heating element, is evenly distributed.
