    Fork dough mixers, what are they?

    Among the kneading machine models to evaluate when choosing one or more professional kneading machines, special attention should be paid to fork mixers, the most suitable for preparing the base for bread.

    In fact, fork mixers give a slow preparation, with a single arm mixing the dough without overheating it.

    How does a fork mixer work?

    A forkmixer has a steel bowl, into which the dough is placed, and a single kneading arm, shaped like a fork.

    The arm rotates in the bowl while maintaining a slight inclination; the movement is slow, and this minimises overheating and heat loss within the dough itself, thus allowing for longer processing times.

    Of all the types of kneading machines, the fork mixer is actually the safest in terms of heat loss to the product. The sought-after slowness of the fork movement also allows low-hydration doughs, such as bread or bigas, to be worked best.

    In fork mixers, the bowl can be either fixed or removable, the latter being more easily sanitised. The presence of one or the other bowl also depends on the type of fork mixer; we distinguish between

    • French fork mixer: the bowl is under the fork, and the fork enters and mixes the dough from top to bottom;
    • self-tilting fork mixer: the bowl and fork are arranged vertically, to allow the dough to be tilted and mixed during preparation in an autonomous and homogeneous manner.

    In both cases, the kneaders perform all the work phases of classic dough making: kneading, spreading, cutting and oxygenating.
