    What are plunger arm kneaders?

    Diving arm kneaders are professional kneading machines that are especially useful for preparing soft doughs, such as pizza dough and softer pastries, such as the much-loved panettone.

    How does a Arm Kneader work?

    The Tilting Arm Kneader is distinguished by the movement of its rotating arms.

    A kneading machine is usually composed of a one-piece structure, into which the hand-formed dough is inserted, and two arms that 'plunge' into the dough to knead it.

    In the system with plunging arms, the left arm has the task of taking the dough from the bottom upwards, while the right arm, equipped with two steel points for mixing, spreads the dough and thus favours its oxygenation.

    This produces a soft, well-ventilated dough, ideal for making pizza or cakes with a very soft texture.

    The professional kneading machines have single-phase or three-phase power supply and are CE-marked.

    Other features that distinguish plunger arm kneaders are:

    • the adjustment of the kneading speed;
    • the capacity of the bowl, which can be up to 160 kg for multi-speed models;
    • dough temperature control to prevent overheating.

    The entire structure of the kneading machines is made of stainless steel, with epoxy paint in compliance with food protocols.
