    The fryer is a professional piece of kitchen equipment, with a 430 stainless steel structure and AISI 304 stainless steel tubs, to guarantee better resistance over time and compliance with the standards currently in force; furthermore, the thermostatic safety valve, necessary for optimal temperature control, allows large quantities of food to be fried in a short time, in full respect of the organoleptic characteristics of the oil, clarified butter and solid fat.     Gas fryers, types and advantages

    A professional gas fryer, although slightly less efficient than an electric one, is more competitive in terms of running costs. The two types currently on the market are:

    • gas fryers with burners outside the tank, also known as "clean tank fryers": they have the advantage of facilitating the cleaning of the tank walls because they are free of the burner mechanism, which is located inside;
    • gas fryers with burners inside the basin, also known as "fryers with burners in the basin": they have the advantage of immediately reaching the maximum temperature for frying food, although they are less easy to clean.

    Electric fryers, types and advantages

    A professional electric fryer heats the oil faster and more evenly than a gas fryer, thanks to the coil heating elements inside the cooking tank. This allows a better recovery time between cooking cycles and less heat loss, however, the operating costs for energy are higher.

    What are mobile electric fryers?
