    • of the indirect type, given by low-pressure steam generated by the water contained in the cavity of the pot. The food being cooked is thus cooked thanks to the steam created by the water outside the pot itself. It is ideal for slow cooking, such as that of creams and sauces;
    • the direct type, where the heat is generated directly by the contact of the cooking water with a heating source, in this case electricity; the heat in this case is not distributed evenly within the vessel, and the cooking elements must therefore be stirred frequently.

    The heat of the steam is controlled by means of a front pressure gauge, while the water level in the cavity in the case of indirect heating is controlled by means of a warning light that lights up when the water level reaches a minimum and needs to be topped up.
