Professional Gas F rying Pots are professional kitchen equipment that complement or replace professional fires for preparing several dishes at the same time.

Professional braising pans, features and functionality

The surface of the braising pan is made of fully conductive stainless steel: the heat distribution is homogeneous and is of the same intensity as that of a normal kitchen fire.

Precisely because the heat is distributed evenly in braising pans, the risk of food sticking to the bottom of the pan (e.g. in meat sauce, risotto or stew) is much lower than in conventional fires, where all the heat is concentrated on the point of fire and thus directly on the pan.

Professional stainless steel braising pans

Made entirely of stainless steel, they are equipped with an almost hermetically sealed lid for cooking and prolonged preservation of the heat in food.

The depth of the braising pan can vary, as can the total capacity, to meet the cooking needs of different recipes to be prepared, such as sauces, ragouts, soups or meat.

The internal temperature, which can be adjusted by means of an external thermostat, can reach +300°C and maintain the heat for hours afterwards.

The tilting system can be automatic or manual, depending on the model. The power supply is gas.

How to cook with the Professional Gas Braising Pan

The braising pan has a very high and well-distributed heat output. This could mean a drastic change in traditional recipes: the best choice would be to put foodstuffs that tend to lose liquid first, so that contact with the high heat stops this loss, and then the drier seasonings, such as vegetables or sautéing mixes.
