1) mechanical electric oven with three 60x40 cm baking trays. Technical details: stainless steel interior and exterior finished in Scoth Bright, chamber with rounded corners, double motor and double fan, internal global diffusion ventilation system, handle with stainless steel support and tubular, 60-minute timer, 280°C thermostat, interior lighting, cold door with low-emissivity glass, removable inner glass, extractable anti-tilt pan guides, interlocking door gasket. Low-cost cooling kit consisting of:
1) blast chiller and professional blast freezer - 5 pans. Our professional blast chillers are essential for the rapid chilling and freezing of food, maintaining product quality and extending shelf life. Blast chilling causes a thermal shock that inhibits the proliferation of bacteria in full compliance with HACCP regulations. Here is why to choose a professional blast chiller: The blast chiller is equipped with a probe-pin (optional) to be inserted directly into the product to monitor the internal temperature of the food through the digital control panel. The presence of an electronic board allows you to customise the cycle setting (+3°C; -18°C), adjusting blast chilling times. You can choose the 'blast chilling' programme to quickly bring the temperature down to +3°C or the 'deep-freezing' programme so that the food quickly reaches a core temperature of -18°C. This professional catering equipment is made of stainless steel to guarantee maximum solidity and sturdiness Made in Italy.
2) 700 litre ventilated stainless steel freezer cabinet with external and internal structure made entirely of AISI 304 stainless steel. The freezer is also adjustable in height thanks to the presence of aisi 304 stainless steel feet. The cell inside has rounded corners to facilitate cleaning operations and thus offer practicality and hygiene in use. Refrigeration is ventilated and therefore cold is produced by an external evaporator with anti-corrosion treated fins. The anti-corrosion treatment is designed to prevent oxidation that would occur as a result of the formation of frost/condensation during normal operation of the freezer.The freezer cabinet works with a 100% yield up to a maximum ambient temperature of +43°C with a relative humidity of 60%.
